I played the Thief games for the first time in the mid 2010s and I thought 1 and 2 were extremely good overall.
I started Hitman with 2 and in hindsight, it aged pretty badly, Contracts and Blood Money hold up, though

MGS despite being a "stealth franchise" has a lot of other things going on besides stealth mechanics. It's very story-heavy.
Hitman Blood Money is really good despite its age and the HITMAN trilogy basically copied it but added more handholding.

This is a valid complaint, but at least in MGS reloading your save is clunky and in Hitman there's limited saves per level.
In Thief it's a major issue, but PC developers in general weren't thinking about saves as an actual game mechanic back then. Being able to just save anywhere at any time was considered a universal quality of life feature. It still is in a lot of cases.

Old Hitman was both janky as fuck and easy as fuck since virtually any disguise let you fuck around all you wanted. The only difficulty from the early titles came from the bad weapon handling, but at least they had grading elements and you had to do a mission in one sitting.
Splinter Cell and Thief are jokes that pretend to be "stealth" when it's really just making 95% of each map convenient NoTarget zones where guards right in front of you can't fucking see you.
Older Metal Gears were the only genuine stealth series even despite their very limited and arcadey nature, like the super short range cones of vision and fixed routine patrols. It had challenges of not being spotted and not killing anyone for an entire playthrough and even measures to prevent savescumming. And then it evolved, shedding those limits over the course of MGS3-4-PW-V to be the only series with truly complex and challenging stealth while still keeping a bit of the gamey elements for fun.

I can replay old hitman and MGS and still enjoy them.
