Nah, that's not actually the scenario at hand, at least with the Pro Skater series. With THPS/Classic Mode, having to string together goals and doing so within the timeline makes routing into an actual challenge, especially with the additional mechanics within that routing (e.g. switching between multiple objects and doing air tricks in order to keep your balance bars manageable). You're not being let loose to make you're own fun, you're being actively challenged. It's really only once you get to the free roam Tony Hawk games that it becomes similar to what's going on with World Tour.

If you want an example of this principle applied to non-racing games, look at the classic Sonic titles. You’re given a relatively open platformer map and a set of tools to traverse it, but the way in which you do so is almost completely free-form and can drastically affect your time.

The whole point of the racing line is that there's an optimal path through every corner, but depending on the other cars you have to modify your path so you don't crash into them. DS actually does suck a fat load with the majority of its courses, so I don't know what argument you're trying to make there. Hell, even in games like Double Dash, where most of the straightaways are a lot more active because they toss a bajillion items onto the field and the mechanics of driving makes it way more interesting trying to dodge them, most people still berate any stage that doesn't crank it up to 11 like Double Dash Baby Park. Main example being Waluigi, and even stages that balance it out a bit like Dry Dry Desert get put on notice

I don't think the fun will necessarily be in the rail grinding itself but rather your decision to do it and how you use it to your advantage.
Correct me if I am wrong but take DK Spaceport for example. It seems to me that when you are about to reach the next climbing section, you have to position yourself beforehand so that you are able to make it onto the rails to begin with. You also have to choose whether you will take the rail path to stay safe from certain items or take the riskier main path with barrel obstacles but with more chances to gain speed from the dash panels. It may not seem all that exciting when watching but when playing, I can imagine it being fun to have to quickly weigh these decisions in your head on a moment's notice.

The fuck are you talking about? Wall running doesn’t force the player to give up control of their car at all. It’s literally just a vertical track piece that players can navigate at their choosing. Electing to drive on a wall to avoid other players or choosing not to is precisely the “modify your path so you don’t crash into them” you claim is somehow absent here.
Rail grinding is limiting, yes, but it doesn’t lock you into any kind of animation. You give up yaw control of your kart in exchange for a stronger mini turbo than what you could obtain otherwise. It’s a very standard risk-reward mechanic.

How? There are tons of paths you can take through a stage depending on your skill level and player character (especially in later entries). For example, from the low path to the high path and back to the low path would grant a different experience from staying on the low path for most of the stage then managing to make it up to the high one. Sure, Sonic CD expanded this design ethos to its logical extreme, but it’s in all of them to some extent.
I am positive if they added the spin dash today and described it in a similar fashion to how the MKW devs are talking about their new mechanics (ie a decision vector), you’d be bitching about it being a “make your own fun” addition as well.
