If you're so certain the brain holds the answers after all the blood stuff fails, your first move should be a Lumbar Puncture so that you can collect cerebrospinal fluid and try to work it out from there.
If you still have no success there - guess what, it's actually VERY possible to open up someone's skull without diving into their brain and killing them. If the cordyceps is indeed there, it would actually be very possible to extract it without killing the patient. It'd be risky, but certainly not impossible. If the doctor hasn't done brain surgery before, give him some time to read up on it (books still exist in this world) and maybe even practice on some shitheads you were going to kill anyway, or corpses of people who have already died.
