I've never really been a fan of modern Rockstar games despite liking GTA3/VC/SA as a kid (and even then they were more of a novelty). I don't care for GTAV or RDR2. There's no denying Rockstar still does arguably the best open world games, so I still check them out on discounts.

I never enjoyed 3D Mario, and I always felt it was superior as a 2D series.

I haven't loved competitive fighting games since Tekken 3, and the last fighting game I actually enjoyed quite a bit was Killer Instinct (2013). I prefer "arcady" fighters that don't really require much work, like the majority of Dragonball games.

The peak of Call of Duty for me was Modern Warfare - World at War - Modern Warfare 2. I dropped out around Black Ops and checked out BO2 to see what all the hype was and didn't enjoy it like I did those three.

I think every Pokemon game from Red-Blue to Sun-Moon are all good and enjoyable, even if some are better than others. Haven't played any on Switch so I can't rate them.

I think Crash Team Racing is superior to Mario Kart 64 (but I love both as well as Diddy Kong Racing).

I enjoyed the Resident Evil remakes, but still prefer the originals. I also enjoyed VII and Village as I have no preference towards fixed camera, 3rd person or first person.

I actually really loved Splinter Cell Blacklist and think it's one of the better entries in the series.

I enjoyed Dark Souls 3 and may even prefer it over the first.

i played the game when it came out. i don't remember much about it. like i said, it's fine to explore. i didn't say it provides a cool and memorable experience. since you asked, though, i'll be charitable and give the first example that comes to mind. playing at the highest difficulty with a sniper rifle, trying not to alert any enemies because it was an almost guaranteed 1 shot death due to being extremely underleveled and exploring far outside the story area, and having nothing but the atmospheric/dialgue volume turnedup and hearing two supermutants debate existentialism and egalitarianism while i crouched waiting to kill them was memorable.

This, I added god mode to Baldurs gate so I could have a fun character without even looking at stats or builds.

Which brings me to my thesis.. the RPGification of most genres is the worst "gameplay" innovation in the last 10-15 years. I do not want "builds". I do not want turn-based combat. I do not want lore and exposition dumps. I. Do. Not. Want. Crafting. Why do I need to level up in an action game? I'd rather you lock abilities/buffs behind upgrades, thematically it's so much cooler. RPGification makes games long and boring and shitty because the whole system of interaction is just incrementally improving your stats against the enemy instead of actually improving reflexes, knowledge of the game, etc.
