This. I have never met a single person IRL who says they enjoyed Remake enough to buy Rebirth.

The way SE has handled this project made it almost feel inevitable. Selling nostalgia can be a huge cash in, but not for the same thing multiple times in a row, because people who buy for nostalgia will usually have it satiated relatively quickly.
I genuinely think a lot of people bought Remake, played the bombing mission and maybe a little bit after, and then never touched the game again, their nostalgia trip over. Obviously those people were never going to buy Rebirth. All that’s left is people who actually finished Remake and are still invested enough to see it through to the end.

I say all of this as someone who genuinely liked Remake and Rebirth despite the flaws.

I have 2 friends IRL who own Playstations and both of them had their copy of Final Fantasy 7 Remake pre-ordered at the local game store (it's an electronics shop, my country doesn't really have dedicated video game stores anymore). They both took a week off work to play it, and they gathered to play it at one of their houses (one of these people is pretty rich and had a nicer TV). These were hardcore, dedicated, fans of the original FF7 and talked about Remake for weeks before release.

To this day neither of them have finished Remake and none of them bought Rebirth.

The problem for me is the construction of the game as a result of modern video game development.
What I mean is this: Video games are expensive and difficult to produce nowadays. Despite the shitposting, Remake and Rebirth are very detailed worlds filled with complex animations and environments. Because of all of the work and time it went into making these, they chopped up the game into 3 parts. This lead the first part to feeling extremely bloated and stretched out. We're comparing it to the story it is remaking. If would be like if you remade Lord of the Rings and Fellowship was now 2-3 films because every scene was just longer and more stretched out. As a fan of the original I felt like I was staring at my watch, exasperated that we were still in the opening areas of FF7 like 20-30 hours into the game. It was wild to me.
Then, of course, because this cannot be a 10 games long they had to then truncate parts of it and so it feels very jarring and choppy. I don't think the games are bad. I think they're fun. However, as a fan of the original I just think that they made a serious miscalculation. I think, at most, it should have been two games. End the first one as Aeris' death (or "death" if you're going for a twist) and then the second game be the rest of it or something. As is, I just find myself wondering how part III is gonna wrap everything up when part I felt almost indulgent in how long it took to get going.

There are a few background NPCs that are literally eradicated forever after 30 minutes and you never see them again.

If you're strict then the party has an asian lady in it but she cute (and romanceable).
If you're even more strict there are a few black background NPCs in the prologue.

I think that indulgence you describe was more of a necessity. Remake is a pretty linear game, especially when compared to Rebirth’s open world. Trying to combine an expanded Midgar with an open world all in one game was way too much to handle. So they needed Midgar to be an entire game on its own, but to do that they needed to bloat it to the extreme.
