Daggerfall, it's really short if you focus on the mainquest. It's timed and whatnot, so you will do sidequests while it advances to the next stages.
I just started a new Daggerfall playthrough, should be fun.

Play Morrowind, don't bother with the rest. Daggerfall is shit and not just because it's old and newer ones are casualized garbage.
Arena and Daggerfall are worth experiencing and aren't particularly long if you don't want them to be, especially Arena. Otherwise the "Big Three" starts with Morrowind, which just got a big batch of content mods released.
If you're interested in the modding scene at large DFU is a good place to start, it's easy to do and has lots of cool mods.

Arena and work your way up or skip to Skyrim. If you're not willing to sit through Arena you probably wont be interested enough to like Morrowind and Oblivion

I played all of these games as an adult so I have no nostalgia for any of them.
I can safely say that Morrowind is the only TES game worth playing, period. That game had to have been lightning in a bottle because the rest of the series is just pure garbage.
If you actually care about the things that RPGs are supposed to be about (story, worldbuilding, roleplaying, character building, adventuring) then Morrowind by far.

I'd recommend to pirate old oblivion for accessibility or morrowind, morrowind feels a bit old and requires you to read more stuff both in game and for planning what to do and what items to use, skyrim is le epic meme but it's also a good first game, just choose the one that catches your attention, if you want my opinion i liked oblivion and morrowind better than skyrim.

I wish they actually remastered Oblivion in more than just graphics. I keep hearing that it should be called a remake instead because of the graphics, but all the same problems and more are present. I'm not talking about the things that made the game more "fun" I mean actual bugs and broken shit.

This is why I still start new saves on Skyrim. Despite being a poor RPG, it still lets you roleplay pretty well in a large, immersive world.
My latest guy is some Imperial nerd who was picking alchemy ingredients near the border before being nabbed. After heading to Winterhold on the advice of some locals, he nearly died exploring a Falmer cave while out picking snowberries, and ran as far South as he could, jumping at every shadow and looking over his shoulder for signs of the blind, skulking demons.

My favorite Skyrim playthrough was playing a Breton Healer who became a priest of Arkay and wandered Skyrim during the Civil War. I had tons of War mods installed and went around cleaning up after watching big battles, burying bodies and healing/calming the wounded.

What are some must-have Oblivion mods?
I've been enjoying vanilla thoroughly, although one mod I'm interested in is one that lets you delete learned spells to help clean up the menu. I went a little overkill with the spellcraft and now scrolling for the right spell in the right situation has become a pain.

Gonna do openMW as vanilla as possible, but I did get those mods. Never did magic really in Oblivion or Skyrim(since its boring) but always heard morrowind is really fun with that.
I already know Dark Elf is the canon for MW, but does Dagoth have unique dialog if you are/arent? Im on the fence from that, I tend to do first runs as the games "canon" race.

No but Dunmer still makes the main story a million times better.
Your character is always an outlander who was born in Cyrodiil, and the natives hate you for that regardless of your race. It's also explained that they hate outlander Dunmer the most because your parents or ancestors essentially betrayed your country.
On your first playthrough you will be clueless about Morrowind as a player but you will slowly learn about the land's history and customs as you play. Remember to read lots of books and dialogues because there is a lot of interesting lore. Analogous to you the player, your outlander Dunmer character will also be clueless at first, but he will gradually reconnect with his country and culture and eventually save his people in the end.
This first playthrough is peak ludo.
