Good, the best way to learn these games is to say fuck it and start playing and you can't get more beginner friendly than granblue. Set small goals for yourself to try and achieve in a match (like blocking a certain move, trying to use a certain move more, etc) and work your way up. This genre isn't that hard as it seems.

Which is harder to improve on: offense or defense? I'm talking about the genre as a whole.

depends on the game but in general it's usually defense as in some games you can have characters that can autopilot offense for you. for OP's game there are some who have a way easier time opening up opponents

I finished my 10 game session and shockingly went 2-8. Player count down here in the trenches seems high enough because I'd be matched with different players each time.

The people at lower ranks will be just as bad and new as you. The secret really is practice, study, replay analysis, and self reflection. Focus on the range of your normals, standing at them, and how the character you pick plays neutral. Good luck.

Not much, she's one of the weakest characters.
However it doesn't matter until very high level play. She's in fact one of the most played characters at the highest rank (Master).

I literally can't beat grapplers in any fighting game. This is the worst time for me to be playing.

Yuel actually got in top 16 which is a very good result.
Everyone knows how to deal with Narmayas, they just flip no stop and try to throwbait you to death.
Beatrix was considered a top 1 character and yet almost no results with her, also she got nerfed now (not much but still).
