All the competitive plays I watched described the interlude tracks like mount Wario.
The mini map might look straight but it's not litterally straight.

mario kart is the most casual game nintendo have in their catalog, they're playing like the average mario kart player, they're not going to show you tech and strategies to get world record times (it's very likely you wouldn't be able to reproduce them anyway and your own skill is much more in line with what's shown in these vids)
