actually there are plenty of interesting roleplaying archetypes that can be built with human warriors, sell-swords, corsairs, brigands, bounty hunters, treasure hunters, tribesmen, cultists, bodyguards, ronin, it goes on and on

theres actually almost too much you can do with a human warrior, in comparison to something more constrained like a warlock for example where your character has to be involved with and derive their power from demons

I think if you pick an exotic race you should pick a boring class. Or vice versa. Stacking too many wacky elements onto a character dilutes them.

Fighter is not even the best class but its noob friendly so most people feel comfortable picking it.

You can do way more things with Sorc, Cleric, Druid, Monks, Bards and Paladins if you know how to build and set up your items. But with Fighter its simple, its a good single target dps, but for some encounters other classes are preferable.

None of the archetypes you listed are warrior specific. Literally all of them could just as easily be applied to warlock, to use your example.
Warlocks can also get their powers from a variety of sources, not just demons.

Boys will always admire knights, swords and stuff. An idiot admires complexity, a genius admires simplicity.

Are there any good games out there where you can PROPERLY live out the human male fighter fantasy, using grit and skill alone in a magical world? BG3 is a terrible example, since every fighter is loaded to the gills with magical gear after a certain point. It kind of detracts from the fantasy when you're basically just a buff melee wizard after the first few levels.

You don't hold your weapon in both your hands all the time. You can just cast normally. Same way a wizard can use a quarter staff with two hands but still cast spells.

You can take a hand off of the weapon for the short time it takes to cast a spell, presumably.

A weapon being two handed only applies to when you are actually attacking with it. It's basically assumed you're able to hold the weapon in any such way as to allow for any other action. Hence why you don't need to drop your greatsword when you chug a potion, or use a scroll, or throw a rock.

That is a problem with the game's class design, just combine all the classes into a giant skill tree and give players more flexibility with their builds

at least 5e rules warcaster feat lets you ignore somatic requirements so you can cast while both hands are holding weapons/shields

It's supposed to like a survivalist, a hunter/tracker who knows how to survive in the wild, hunt and kill giant monsters, navigate unfamiliar terrain, etc. The problem is that skillset is difficult to actually make useful in a tabletop RPG, it's better suited to a video game or something where you do all that stuff yourself. Problem being, BG3 is fundamentally mechanically tied to the tabletop, so it can't do so even as a video game.

Not really needed combat wise in this case, but as a DM I'd rule that it means you can essentially ignore somatic requirements, so you could cast with your hands bound, or you are carrying boxes or something that requires two hands. After all how does the spell know it's a weapon and not a large planter pot?
