Videos hit different plateaus depending on how long you make them.
If you're trying to make a genuinely informative video, it's difficult to make a shorter 10-15 minute video without it being very general. If you give yourself around an hour instead, you can dig deep into different parts of the game or topics/ideas covered by the game, explain them thoroughly and evidence them and have a well rounded video.
There's usually enough content in non joke games to make a 3-4 hour critique if you break down every aspect, choice and decision made within the game, explain them to the audience, and then add your own thoughts and feelings on how they present to the player.
Every hour you go over that though is just pure insanity for the majority of games. Past the 4 hour mark you are really, really digging absolutely every out of a game to talk about it, your points stop being very relevant, nothing you're saying is going to be able to tie in properly even if you block out sections to talk about specific things. To make a video 14 hours without it being full of repeated points, nonsense and meaningless drivel is difficult enough for it to take a year, or even years. Just on editing and reviewing the overall flow of the video alone.

Though he obviously doesn't mean a full jobs worth of time every day when he says it took a year and it also doesn't mean the 14 hour video is coherent, it almost certainly isn't.

I like these types of videos, but I've noticed that often times they'll base it on something they think is objective or factually accurate when in reality it is just a subjective interpretation or biased perception of what the game is like. It happens with all the content creators, big and small. As an example you have that Mauler guy's infamous DS2 video where he often times argues from the stance that rolling as a mechanic and 1v1 bossfights are not only the baseline for balancing in the game, but also what the players want/are expecting.

Look i get talking about it for an hour because persona games are 60-80 hours and 5 is 120+ so that makes sense and can be excused.

Anon, summing up an arc is not the same as analyzing it at all. You can also go into depth about specific things like how their growth affected their actions later in the story, how it differs from their social link, how it relates to the game's overall message, etc. And you don't only have to analyze the story in videogames either, all of it ties into each other like pointing out how the calendar system in Persona serves to reinforce the themes of the game (well moreso in 3 and less with each sequel).
It's similar to how I could explain to you right now how a car drives, shifts gears, cools itself down, and so on in less than 200 words. But that would only be a basic explanation that doesn't explain it beyond a layman's understanding.

Now I do not think most video essays even do proper analysis, even though they all pretend to. I'm just saying that the length doesn't matter, you could probably find enough in Persona to talk about for well over 50 hours if you really wanted.

I'd say most of them are equally bad to the point where it's hard to single them out. The biggest issue I have with modern video essays beyond their homogenous structure and minimal length:substance ratio is the way they clearly don't think through their opinions before making the videos. Videos take a long time to make so if you spend 50-100 hours making something it's easy to think you've put in the effort but if your gameplay analysis is all basically first impressions then it's a waste of time.

I will give credit to people like Joseph Anderson or Noah for putting in effort and trying to bring new perspectives but they just don't make good videos. They both have backgrounds that would give them an edge in writing yet they get absolutely mogged by regular gamer guys who just have passion and interesting stuff to say.

then again, if you end up learning to hate writing/typing this kind of shit down from a young age thanks to school or the disconnect with a computer, then yeah, i could see why podcast videos could be more appealing. i just think it can benefit video content too since it helps to be able to tell 'which' format that kind of stuff works better.
